Having left his beloved San Ignacio at age 16, he started as a busboy clearing dining tables at Belize City's Fort George Hotel in the mid-1970s; Mr. Q. (as all affectionately knew him) rose through the ranks, becoming internationally trained and specializing in French Creole Cuisine and all things Food & Beverage related. He cooked for and attended to Prime Ministers, Presidents, Royals, Celebrities, and other VIPs. He inspired a generation of service industry professionals and countless customers of his.
